Commencez par éplucher et détailler les pamplemousses en suprêmes. Pressez le reste des pamplemousses et réservez le jus.<\/p><\/div><\/div><\/div> 2. Lavez et ciselez finement le fenouil. Dans un saladier, mélangez-le avec 3 cuillères à soupe d’huile d’olive, 3 cuillères à soupe de vinaigre de xérès, une pincée de sel et de poivre.<\/p><\/div><\/div><\/div> 3. Mélangez et ajoutez la coriandre fraîche. Gardez quelques feuilles pour le dressage.<\/p><\/div><\/div><\/div> 4. Dans une poêle bien chaude, versez un filet d’huile d’olive, puis saisissez les noix de Saint-Jacques 1 minute de chaque côté.<\/p><\/div><\/div><\/div> 5. Débarrassez les noix de Saint-Jacques de la poêle, puis déglacez avec le jus de Pamplemousse de Floride. Laissez-le légèrement frémir et ajoutez le beurre pour monter la sauce. Salez puis poivrez.<\/p><\/div><\/div><\/div> 6. Dressez une cuillère à soupe de salade de fenouil dans la coquille préalablement lavée, déposez 3 noix de Saint-Jacques, puis nappez-les de beurre de pamplemousse.<\/p><\/div><\/div><\/div> 7.
